Dietary Oxidants and Antioxidants, Oxygen Radical Damage, and Carcinogenesis in Human Subjects

Project Description

Dr. Campbell sought to determine whether antioxidants in foods can protect against damage to DNA, the genetic material, and thus lower cancer risk. The studies were carried out on people living in the People’s Republic of China. Antioxidants in foods they eat were measured, as well as markers for DNA damage in blood and urine. The antioxidant and marker levels were correlated with the cancer rates in the Chinese.
