Pumpkin Protection

Our Health-e-Recipe for Pumpkin Soup is an easy way to fortify your health against cancer and celebrate the season. Its ingredients are low in cost and low in calories, at only 71 per serving.

All it takes is a couple of cans of pumpkin purée, loaded with protective beta-carotene, an antioxidant that turns into vitamin A when you eat it. If you prefer, use butternut squash (frozen or fresh), another vegetable whose orange color denotes plentiful beta-carotene.

Add reduced-sodium vegetable broth, plus some phytochemical-rich onion and garlic. Thyme and parsley also provide some cancer-fighting compounds along with their excellent flavors for this soup.
