Project Description:

Dr. Mirvish investigated in human volunteers and in rats how vitamin C from dietary fruits and vegetables inhibits the formation of nitrosamines. He measured 3-methyladenine in the urine as a possible indicator of increased risk for cancers of the stomach and esophagus. This substance is formed when nitrosamines attack DNA.
