High School Students Win AICR Scholarships for Healthy Dessert Recipes
WASHINGTON, D.C. – At an event earlier this month in Washington D.C., a high school student from Virginia was awarded a $5,000 scholarship for his first-place recipe entry in the national Super Foods Dessert Contest sponsored by the Careers through Culinary Arts Program (C-CAP) and the American Institute for Cancer Research (AICR).
David Robinson, a student at Princess Anne High School in Hampton Roads, Virginia, was one of three high-school seniors awarded AICR/C-CAP scholarships to attend culinary school.
Robinson received his $5,000 scholarship at a ceremony at AICR’s headquarters, which was followed by a meet-and-greet with Chef and contest judge Wil Going, Executive Director of Food and Beverage at Chef Geoff’s restaurant in Tysons Corner. Going took Robinson into the kitchen and put him on the line to prep for the lunch rush, and let the young man taste several new dishes that Chef Geoff’s will be featuring in the coming weeks. Culinary arts teachers at 185 C-CAP schools across the country introduced students to AICR’s evidence-based guidelines on eating for lower cancer risk. They challenged each student to create nutritious and delicious desserts featuring a variety of fruits, whole grains, seeds, nuts, spices and other plant foods. Loaded with hundreds of phytochemicals as well as vitamins, minerals and fiber, these “Super Foods” help protect our bodies’ cells against cancer.
“I love sweet potato pie,” said first-place winner Robinson, “so I approached this challenge by trying combinations I knew could naturally enhance the sweet potato’s nuttiness, like toasted coconut and chocolate.” This fall, David will attend Johnson and Wales University in Providence, where he will pursue his interests in both nutrition and the culinary arts.

Shameer Griffin, a student at Randolph High School in Philadelphia, won second place and a $3,000 scholarship for his Chocolate & Blueberry Tofu Mousse with Sesame Crunch. Maricopa High School student Jessica Stansbery from Phoenix, Ariz., won third place and a $2,000 scholarship for her New York Style No-Bake Cheesecake that incorporated oats and berries.
All the winning desserts help people make the kind of healthier choices that reduce the risk of cancer, one of the missions of AICR. “AICR is proud to play a part in helping tomorrow’s chefs learn the skills they’ll need to create dishes that highlight the variety of tastes, textures – and health benefits – of plant foods,” said AICR’s Senior Vice-President for Programs Deirdre McGinley-Gieser. “These students were challenged to create delicious, satisfying desserts that let their ingredients’ natural flavors shine through. We’re delighted with the results.”
C-CAP provides scholarships, education, and career opportunities in the culinary arts for underserved youth. “Many young people today suffer from illnesses resulting from poor nutrition and being unaware about healthy eating. Part of our mission is to educate our C-CAP students on these issues, and provide them with the tools and opportunities to encourage healthy lifestyles and be the ambassadors of this message in their communities. We are proud to partner with AICR in this effort,” said Susan Robbins, C-CAP President.
All students from 185 schools at seven different C-CAP centers across the country were invited to participate. One finalist from each C-CAP center was selected to submit a recipe and photo to a distinguished panel of judges. The panel chose the winners based on originality, flavor, healthfulness, ease of preparation, and writing. The judges for the first annual AICR/C-CAP Super Foods Dessert Contest were:
