Project Description:

Dr. Mirvish sought to elucidate whether nitrosation of free amino acids in the stomach results in products that are capable of binding DNA. Potentially, these adducts initiate carcinogenesis and may result in gastric cancer. Animal and human studies were carried out to determine if nitroso compounds in the gastric juice are a result of feeding nitrates. Selected foods, including hot dogs and salted dried fish, were analyzed for compounds that could yield carcinogenic nitroso compounds.
